coconut tapioca pudding

Coconut Tapioca Pudding is very popular right now, it seems everyone is making it. Well it is very easy when you know how. I had a look around the web and all the recipes have got all fancy so here it is very simple and easy.

1 cup tapioca pearls
2 cups water
1 can coconut milk
1/4 teaspoon pure vanilla essence
1/3 cup white sugar (if you prefer substitute with honey or maple syrup)

In a large sauce pan soak 1 cup tapioca pearls, in 2 cups of water for at least 15 minutes .

Once soaked for 15 minutes cook for 10 minutes on a low heat stirring constantly. It will start to thicken and go clear.


You will notice it is cooked when nearly all the pearls are translucent. Once this happens add the can of coconut milk and vanilla essence and stir really well.


Once you have all the lumps out add the sugar, and cook stirring for another 5 minutes. It is now ready to eat hot, or let it cool and eat it when it is set like the photo.

You can try different flavours, or just eat it plain.

ours are: rhubarb, melt chocolate through while still hot, drizzle passion fruit over the top.
