After making all that pea pesto it got me thinking – how can I use the pesto in a breakfast? So if you have some pea pesto left over this is a great way to use it up.
Green eggs are so easy to make, you just need a ramekin or small single pie dish.
2 table spoons of ricotta cheese

small leaf kale
salt and peper
fresh chives to garnish
soda bread on the side
Line the ramekin with the pea pesto, crumble the ricotta cheese around, cut the kale finely in strips and place that around on top. Make a well in the pesto where you are going to put the eggs. crack in the eggs. Cook in a moderate oven 150C° for 10-15 minutes depending how soft or hard you like your eggs.
