I am right into cooking waffles now that I have got started. These are just as easy as the plain waffles to mix up but are gluten free, very tasty and crisp.
1 cup of cornflour
1/2 cup of rice flour
2 teaspoons of baking powder
1/2 teaspoon of salt
2 large eggs
1 1/2 cups of milk (rice, cow, oat, soy)
2 tablespoons butter (melted) (vegans use alternative)
3 tablespoons honey (vegans use alternative, maple syrup, sugar)
Let sit for 7-10 minutes as corn flour needs to absorb liquid. This is a very stiff batter and needs to be pushed into the corners of the waffle iron.
Served here with poached hard peckham pears in honey and ginger. Garnish raw pear.
