bento box – sushi

I have been wanting to try and make sushi for ages and finally got around to it today. I love sushi and with the nori being on the NO list now this makes it very tricky. I did have a got at rolling the rice but that was a disaster, but I will keep trying with different ideas and see what I come up with. For this sushi I pressed it into the moulds that you can buy now in any asian supermarket.


sushi rice
1 cup cooked brown rice or white rice
2 teaspoons white vinegar
1 teaspoon sugar
pinch of salt

stir the vinegar, sugar and salt together until dissolved and mix well into rice.
cut up very finely what ever you want in your sushi, I had purple and orange carrot, tofu and cucumber.
Spring onion or chives would be nice.
Press into the mould and put in fridge until needed.

Bento Box

1 section
Mellon balled water mellon and blueberries
1 section
cucumber cut outs and fresh podded peas
1 section
the cucumber skins and purple and orange carrot pieces all were on a bed of fresh kale.
