Cinnamon Scones

Very tasty cinnamon scones great for anytime, but good if expecting company. If you don’t like cinnamon or you want a change, just leave it out and they will be ‘Butterscotch scones’.

Scone mix
2 cups of self raising flour (any mix of flours)
2 Tbsp butter (vegan alternative)
2/3 cups milk (cow, soy, rice, anything but nut based)

Filling
1/3 cup butter (vegan alternative)
3/4 cup brown Sugar
1 tsp cinnamon

Preheat the oven to 190°C.
Put the flour, and butter into a food processor and wizz to the consistency of bread crumbs.

Add the milk and blend slowly until just mixed.

Turn out onto floured surface. Pat or use rolling pin to get mixture into a oblong shape.

In the food processor put all the ingredients for the filling, pulse until combined.

Spread the filling onto the dough. Roll up and seal the end closed with a bit of milk. Slice into 2cm slices. Place the slices on a baking tray and bake for 15 – 20 minutes.
