Fresh and simple Ginger Beer – It is hard to find something different to drink apart from water, but I found this recipe for Easy Peasy ginger beer on Jamie Oliver’s web site. I then adapted it with Lemon Cordial from the Friendly Food, Food For Life book from the Royal Prince Alfred Hospital Allergy Unit. It’s got floaty bits so you might want to put through a strainer before serving.
1 inch square fresh ginger
5-6 Tbsp brown sugar
1 tsp citric acid
1 litre soda water or sparkling mineral water
a few sprigs of fresh mint
Grate ginger, and add all ingredients together and leave to sit for 10 minutes before serving.
