I use the Orgran gluten free buckwheat pancake mix. It is fantastic, it is never fail and you don’t have to leave it to sit for a while like wheat or vegan pancakes. Follow the recipes on the back of the box for vegan recipe. This is how I make it up.
Ingredients for 2 people
1 cup of buckwheat mix
1 cup of milk
1 Tbs melted butter
put all the ingredients in a bowl and mix. add some olive oil or butter to the pan to grease and cook your pancakes. Add more milk if you want thinner pancakes. You can see from the image that mine are more like American hotcakes.
Serve with maple syrup and fresh fruit.
